This is a perfect springtime wrap. It’s light, healthy and delicious. Great for when the weather starts to warm up outside. I was inspired to make this from my trip to Lebanon many years ago. It’s got a little Lebanese style mixed with some Californication!
- 2 whole grain tortilla
- 1 avocado
- 2 hard boiled egg
- 6 kalamata olives
- 6 sliced cucumbers
- lettuce mix
- extra virgin olive oil
- 1 lemon
- salt & pepper
- lay tortilla out on a plate or cutting board. tear a handful of lettuce and lay on tortilla.
- slice avocado, egg cucumbers and kalamata olives.
- lay everything on top of lettuce. squeeze lemon over the top.
- drizzle with extra virgin olive oil and season with salt & pepper.
Roll tortilla up and EAT
