Black Bean Empanada

It was one of those clean out the fridge and pantry days! Using what I had on hand without going to the grocery store! I had a package of dried black beans so I cooked those and portioned them into 8oz containers for freezing. I prefer this method to always stocking cans of beans because it’s cheaper and I control the ingredients in them. I do have cans of beans though for when I haven’t made a big pot for freezing.

I also had some dough left from my amazing peach pie! My muses got to whispering and all of a sudden I was making empanadas! I had a few other ingredients to work with and what happened was this…
